According to the 2015 "State of the Specialty Food Industry" report, produced by the Specialty Food Association and Mintel, the condi- ments, dressing, and marinades category saw 12.1 percent growth between 2012 and 2014, ranking seventh in specialty food sales last year at $1.75 billion. More consumers are showing inter- est in the specialty condiment segment.
