is created by our group of small producers– 170 in total,
many producing 10 or 12 wheels (or fewer)– in a day.
This is a labor of love for our people, who have cared
for each wheel that we've produced for more than 900
years. Gruyère AOP may be the world's fi rst 'small
batch' food!
