Irene Costello and Joan MacIsaac have been friends since high school, and the two Massachusetts women had tried their hands at catering, cooking classes and other food businesses before creating a product from a fourthgeneration recipe for oatcakes, which has since struck sofi gold—twice. The farmhouse recipe from Nova Scotia was initially made with lard, and when MacIsaac's mother brought the recipe to Boston in the 1960s, she used Crisco. Today, Effie's Oatcakes are butter-based biscuits, made with a short list of high-quality ingredients, including wheat flour, rolled oats, unsalted butter and sugar. The oatcakes debuted in a 7-ounce bag in 2008, but on recognizing a demand for wholesome graband-go snacks, the friends debuted a single-serving package a year later. With a one-year shelf life, the oatcakes—which have a texture profile somewhere between a cracker and a cookie—are crisp with a lightly sweetened, nutty flavor. Effie's Homemade is currently taste-testing two new recipes for its product line. While oatcakes have many uses and serving options, the company recommends pairing them with sharp cheddar or Stilton for a savory snack, or chocolate or jam for a sweeter treat.
