COOKING SAUCE OR FLAVOR ENHANCER ➍ ➌ ➋ ➊ LILLIE'S Q Hot Smoky Barbeque Sauce CHEF CHARLIE MCKENNA'S SAUCE GOT ITS START in his Lillie's Q restaurants, but he has long had sauce flowing through his veins. "The sauces are inspired by my grandmother, Lillie. She taught me the secrets of sauce and the importance of unique blends to enhance the flavor of our food," he says. Hot Smoky came from his love of pairing smoky and sweet flavors. "It is a Memphis-style sauce that is sweet with a hint of kick," ideal for barbecue and smoked meats, he says. "It is the only [sauce] that adds spiciness to your BBQ." Getting the right combination of flavors in each of his eight sauces has been something of a process for the chef. "You can't get caught up in ratios, or using the right ingredients," McKenna says. "It's about using the right tastes that will enhance the original flavor of the meat rather than mask it."
