Osner notes that many cookies that are popular now have a shorter shelf life than traditional packaged cookies. It's not unusual to have a shelf life of 10 days, he says, a further indication that preservatives and artificial ingredients are being shelved, so to speak. Simplicity Reigns. Traditional flavors tend to remain the most popular in the healthier cookie category. Rhein notes that while producers have been quick to think outside the box in incorporating healthier ingredients, many stick with safe flavor pro- files in lieu of anything that may be perceived as over the top. "They don't want to scare people too much," he explains. "So they're mostly lim- ited to basic f lavors like ginger snap, lemon, or other single-f lavored varieties." While cookies with a healthful bent do come in varieties like walnut, toffee, lemon, and cranberry, Osner says that nothing is as popular as the most classic cookie f lavor. "Chocolate chip is by far selling 4- or 5-to- 1," he says. Familiar pantry staples like cinnamon, peanut butter, and old-fashioned rolled oats are making a splash. "I see a lot of cook- ies being made with oatmeal and whole rolled oats," Rhein says. GinnyBakes has two oatmeal varieties: Chocolate Chip Oatmeal Bliss and Coconut Oatmeal Bliss. Cookie Sense and Susie's Smart Cookie both use rolled oats for their hearty offer- Rather than mimicking fresh-baked soft and thick chocolate chip cookies, many new products have moved toward a thin, crispy texture.
