Gluten Free Lobster Mac & Cheese CAL HANCOCK ISN'T ONE TO REST ON HER LAURELS. With multiple sofi Awards under her belt, including for the Port Clyde Lobster Mac & Cheese, she set about creating a gluten-free version of this comfort food classic. Her inspiration was several employees at Hancock's Maine headquarters with celiac disease. "The lobster didn't require any changes, but it took a lot of experimenting with different types of pasta because flavor is so important to us," says Hancock. "We ended up going with a quinoa shell pasta, and then for the topping, we used a gluten-free rice and corn flour for breadcrumbs." The result is a creamy entree with a crunchy topping, plus sweet chunks of Maine lobster and locally produced mascarpone-cheddar cheese sauce. "It's been available for more than a year and is becoming a top seller," says Hancock, who adds that she plans to develop more gluten-free versions of popular entrees and soups, such as the company's lobster risotto and clam chowder.
