Fermin Iberico de Bellota Smoked Panceta
IBERICO DE BELLOTA PIGS, DESCENDANTS OF NATIVE HOGS on the
Spanish Iberian Peninsula, spend their lives grazing on acorns and herbs on
free-range, family-run farms. This gives their meat, specifically the pork belly,
a marbled texture and a nutty, buttery flavor—not to mention a high level of
heart-healthy omega 3 fatty acids from the acorns.
Washington, D.C.–based food emporium Wagshal's was the first retailer
to import the pork in 2010. "After importing it, we have the pork belly
cured and smoked by a family smokehouse in Pennsylvania, combining
the best-quality pork with American culinary traditions," says Aaron Fuchs,
second-generation co-owner of Wagshal's. "The result is an exceptional,
artisan panceta we distribute around the country."
This is Wagshal's third sofi for the Fermin Iberico de Bellota's Smoked
Panceta. Says Fuchs, "We're dedicated to producing a distinct, high-quality
