Cucina Antica's Tuscany Pumpkin Pasta Sauce
BRINGING THE FLAVORS OF HIS BIRTHPLACE OF SAN MARZANO, ITALY,
to grocery stores throughout the country, Neil Fusco focuses on making
fresh, light pasta sauces. The chef and owner of Cucina Antica Foods has
created a versatile product with Tuscany Pumpkin Pasta Sauce, which can be
used on pasta, meat, or fish, but is also hearty enough to serve as a soup. It
is gluten-free, preservative-free, and sweetened with honey in place of sugar.
Fusco couples imported San Marzano tomatoes with peak-harvested
pumpkins to create the earthy, all-natural sauce. "Typical pumpkin sauce
recipes don't include tomatoes, but we found that the tomatoes gave our
sauce a unique and balanced flavor," he says. It is made in small batches and
finished off with a combination of garlic, rosemary, sage, a touch of cream,
and hints of honey and cinnamon. Suggested retail price: $7.99/25 ounces.
