Governor's Cheddar Crackers
FROM HUMBLE BEGINNINGS IN HER HOME KITCHEN six years ago, Whitney
Lamy has come a long way with her artisanal crackers. Her company,
Castleton Crackers, took home sofi gold this year with its Governor's
Cheddar crackers, and Lamy credits the win to the crackers' honest and
straightforward cheese flavor with a slight saltiness and crunchy texture.
"We call it the high-end, all-natural, ultimate cheese cracker," she says.
Castleton Crackers became part of the Vermont Farmstead Cheese
Company in 2013, and the crackers are made with Vermont Farmstead's
award-winning Governor's Cheddar and other local ingredients. Head
cheesemaker Rick Woods takes great care with his creations. "We know
the cows on the farm that produce the milk that Rick makes the cheese
with," Lamy says. The crackers are available for foodservice and in bulk
